&lt;br/&gt;The word cherry refers to a fleshy fruit (drupe) that contains a single stony seed. The cherry belongs to the family Rosaceae, genus Prunus, along with almonds, peaches, plums, apricots and bird cherries. The subgenus, Cerasus, is distinguished by having the flowers in small corymbs of several together (not singly, nor in racemes), and by having a smooth fruit with only a weak groove or none along one side. The subgenus is native to the temperate regions of the Northern Hemisphere, with two species in America, three in Europe, and the remainder in Asia. The word "cherry" comes from the French word "cerise", which comes in turn from the Latin words cerasum and Cerasus.
&lt;br/&gt; 
&lt;br/&gt;
&lt;br/&gt;The cherry is generally understood to have been brought to Rome from Persia. Giresun was known to the ancient Greeks as Choerades or Pharnacia and later as Kerasous or Cerasus, &amp;lt; Kerason &amp;lt; Kerasounta &amp;lt; Kerasus "horn" (for peninsula) in Greek + ounta "Greek toponomical suffix".[1] The name later mutated into Kerasunt (sometimes written Kérasounde or Kerassunde).
&lt;br/&gt;
&lt;br/&gt;The English word cherry, French cerise, Spanish cereza, and Southern Italian dialect cerasa (standard Italian ciliegia) all come from Classical Greek κέρασος "cherry", which has been identified with Cerasus. The cherry was first exported to Europe from Cerasus in Roman times. [1]
&lt;br/&gt;
&lt;br/&gt;The Wild Cherry (P. avium) has given rise to the Sweet Cherry to which most cherry cultivars belong, and the Sour Cherry (P. cerasus) is used mainly for cooking. Both species originate in Europe and western Asia; they do not cross-pollinate each other. The other species, although having edible fruit, are not grown extensively for consumption, except in northern regions where the two main species will not grow. Given the high costs of production, from irrigation, sprays and labour costs, in addition to their proneness to damage from rain and hail, the cherry is relatively expensive. Nonetheless, there is high demand for the fruit.
&lt;br/&gt;
&lt;br/&gt;Major commercial cherry orchards in Europe extend from the Iberian peninsula east to Asia Minor, and to a smaller extent may also be grown in the Baltic States and southern Scandinavia. In the United States, most sweet cherries for fresh use are grown in California and Washington. Important sweet cherry cultivars include "Bing", "Brooks", "Tulare", "King", and "Rainier". Oregon and Michigan provide light-coloured "Royal Ann" ('Napoleon'; alternately "Queen Anne") cherries for the maraschino cherry process. Most sour (also called tart) cherries are grown in four states bordering the Great Lakes, in Michigan (the largest producers of cherries among the states), New York, Pennsylvania, and Wisconsin; however, native and non-native cherries grow well in Canada (Ontario and British Columbia) as well. Sour cherries include Nanking and Evans Cherry. Traverse City, Michigan claims to be the "Cherry Capital of the World", hosting a National Cherry Festival and making the world's largest cherry pie. The specific region of Northern Michigan that is known the world over for tart cherry production is referred to as the "Traverse Bay" region. Farms in this region grown many varieties of cherries and companies like Traverse Bay Farms sell the fruit of the region. Likewise in Australia the New South Wales town of Young is famous nationwide as the "Cherry Capital of Australia", and also hosts the internationally famous National Cherry Festival. Popular varieties include the "Montmorency", "Morello", "North Star", "Early Richmond", "Titans" and "Lamberts".
&lt;br/&gt;
&lt;br/&gt;Cherries have a very long growing season and can grow anywhere, including the great cold of the tundra. In Australia they are usually at their peak around Christmas time, in southern Europe in June, in America in June, and in the UK in mid July, always in the summer season. In many parts of North America they are among the first tree fruits to ripen; hence the colloquial term "cherry" to mean "new" or "the first", e.g. "in cherry condition".
&lt;br/&gt;
&lt;br/&gt;Annual world production (as of 2003) of domesticated cherries is about 45698 million tonnes, of which a third are sour cherries. Around 75 percent of world production originates in Europe.
&lt;br/&gt;
&lt;br/&gt;Besides the fruit, cherries also have attractive flowers, and they are commonly planted for their flower display in spring; several of the Asian cherries are particularly noted for their flower displays. The Japanese sakura in particular are a national symbol celebrated in the yearly Hanami festival. Many flowering cherry cultivars (known as 'ornamental cherries') have the stamens and pistils replaced by additional petals ("double" flowers), so are sterile and do not bear fruit. They are grown purely for their flowers and decorative value. The most common of these sterile cherries is the cultivar 'Kanzan'. Cherry trees provide food for the caterpillars of several Lepidoptera. See List of Lepidoptera which feed on Prunus.

&lt;br/&gt;Cherries contain anthocyanins, the red pigment in berries. Cherry anthocyanins have been shown to reduce pain and inflammation in rats.[2] Anthocyanins are also potent antioxidants under active research for a variety of potential health benefits.[3] According to a study presented at the Experimental Biology 2008 meeting in San Diego, rats that received whole tart cherry powder mixed into a high-fat diet didn’t gain as much weight or build up as much body fat, and their blood showed much lower levels of indicators of the kind of inflammation that has been linked to heart disease and diabetes. In addition, they had significantly lower blood levels of cholesterol and triglycerides than the other rats.[4]

      <description>&lt;div&gt;The cherry blossom (sakura) is Japan's unofficial national flower. It has been celebrated for many centuries and takes a very prominent position in Japanese culture.

&lt;br/&gt;There are many dozens of different cherry tree varieties in Japan, most of which bloom for just a couple of days in spring. The Japanese celebrate that time of the year with hanami (cherry blossom viewing) parties under the blooming trees.

      <description>&lt;div&gt;I'm having a baby in July and she already has cherry things.  A pink onesie with 2 big cherries on it, pink leather slip on shoes with cherries, and my favorite, a big white blanket with little red cherries all over it and red satin edging.  My little cherry girl.

      <title>All About Cherries, History Of</title>

      <description>&lt;div&gt;Cherries occupy the Cerasus subgenus within Prunus, being fairly distinct from plums, apricots, peaches, and almonds. They are members of the Rosaceae family, subfamily Prunoideae. Prunus avium L. is the Sweet Cherry, and Prunus cerasus L. the Sour Cherry. 
&lt;br/&gt;
&lt;br/&gt;As a group, cherries are relatively diverse and broadly distributed around the world, being found in Asia, Europe, and North America. In addition to the main species above, P. fruticosa (ground cherry) and P. pseudocerasus (Chinese cherry) are minor fruit species in the former USSR and China. While sweet cherries are virtually all P. avium, the term sour cherry may include hybrids between P. avium and P. cerasus (referred to as "Duke cherries"), ground cherry, and hybrids of ground cherry with P. cerasus. 
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Sweet cherry cultivars:
&lt;br/&gt;Many sweet cherries were introduced from Europe, although several breeding programs worldwide have produced cultivars of regional importance. When Romans dispersed cherries throughout Europe, cultivars of local importance were selected; contemporary sweet cherries are genetically very similar to these initial selections. 
&lt;br/&gt;
&lt;br/&gt;Cultivars are sometimes categorized into "heart" (syn. Guigne in French, Gean in England) and "Bigarreau" groups; the former are heart-shaped, softer fruits, while the latter are round, firm, crisp fruits. 'Bing', 'Napoleon' (syn. 'Royal Ann'), and 'Lambert' are the most important cultivars in North America. 'Ranier' is rapidly increasing in importance, having unique light-red blush over yellowish skin color; prices received by growers have been well above red-colored cultivars through the mid 1990's. 
&lt;br/&gt;
&lt;br/&gt;All commercial cultivars exhibit gametophytic incompatibility with themselves and several others, hence cross-pollination and choice of pollinizer are critical.
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Sour cherries are also divided into 2 groups: 
&lt;br/&gt;
&lt;br/&gt;1) Amarelles - Upright, vigorous trees; pale colored fruit, or reddish, with light-colored or clear juice, low acid [Montmorency, Kentish, Early Richmond], and 
&lt;br/&gt;
&lt;br/&gt;2) Morellos - Small, bushy, compact trees; dark red fruit, more spherical, higher acid, red colored juice [Stockton, Vladmir, North Star].  'Montmorency' is by far the main tart cherry, accounting for 95% of all production. 'Early Richmond' and 'English Morello' are two other tart cultivars of importance.

&lt;br/&gt;Sweet cherry
&lt;br/&gt;This species originated in the area between the Black and Caspian seas of Asia Minor. Birds probably carried it to Europe prior to human civilization. Cultivation probably began with Greeks, and was perpetuated by Romans, where it was believed to be an essential part of the Legionnaire's diet (this lead to the spread throughout Europe). Sweet cherries came to the US with English Colonists in 1629, but probably died out in the eastern US relatively quickly, while sour cherries persisted. Sweet cherries were introduced to California by Spanish Missionaries, and in the 1800's by pioneers and fur traders from the eastern US. A California nurseryman, Seth Lewelling, gave 'Napoleon' the synonym 'Royal Ann', creating confusion that persists today. ('Bigarreau Napoleon' = Napoleon; term means "firm-fleshed" in French). 
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Sour cherry
&lt;br/&gt;There is good evidence suggesting that P. cerasus arose from an unreduced pollen grain of P. avium crossed with P. fruticosa; this occurred in the same geographic region as for sweet cherry. The sour cherry came to the US with English settlers, like sweet cherries. It is more tolerant of the humid, rainy eastern conditions, and therefore proliferated there more than sweets, where it is still cultivated today in greatest numbers. Sour cherries do not attain good size when grown in arid climates. 
&lt;br/&gt;
&lt;br/&gt;Sour cherry growers prefer the term "pie" or "tart" cherry over "sour", since this connotes bad flavor. Most sour cherries are processed into pie fillings, hence the name. 
&lt;br/&gt;

&lt;br/&gt;Botanical Description
&lt;br/&gt;
&lt;br/&gt;Sweet Cherry
&lt;br/&gt;
&lt;br/&gt;Plant: Vigorous tree with strong apical control with an erect-pyrimidal canopy shape; grows to 18m (&gt; 50 ft). In cultivation, sweet cherries are maintained &amp;amp;lt;4m (12 ft) in height. Leaves are relatively large, elliptic with acute tips, petioled, and strongly veined. 
&lt;br/&gt;
&lt;br/&gt;Flowers: White, with long pedicels, borne in racemose clusters of 2-5 flowers on short spurs with multiple buds at tips; the distal bud is vegetative and continues spur growth. Spurs are long-lived, producing for 10-12 years. Bloom occurs relatively late in spring, so frost is less of a hazard than for other stone fruits, except sour cherries, which bloom slightly later.
&lt;br/&gt;
&lt;br/&gt;Pollination: Pollination is absolutely essential for production, since sweet cherries are self-incompatible. 25-50% of flowers must set fruit for a commercial crop. Bees are the main pollinator. Pollinizers are usually set every third tree in every third row, or in alternate rows. 
&lt;br/&gt;
&lt;br/&gt;Fruit: A drupe; small 0.5-1 inch diameter, glabrous, with long pedicel attached. Fruit color ranges from pale yellow to dark purple (black). 
&lt;br/&gt;
&lt;br/&gt;Thinning is unnecessary for fruit size development, and since a high proportion of flowers must set for a crop, this is not practiced. 
&lt;br/&gt;
&lt;br/&gt;Maximum yields are obtained beginning in the 5-6th year after budding, and trees are productive for 25-30 years, despite living much longer. 
&lt;br/&gt;

&lt;br/&gt;Sour Cherry
&lt;br/&gt;
&lt;br/&gt;Plant: Medium sized tree with a rounder, more spreading habit than the erect sweet cherry. Kept &amp;amp;lt;4m (12 ft) in cultivation. Leaves elliptic with acute tips, smaller than sweet cherry, petioled. 
&lt;br/&gt;
&lt;br/&gt;Flower: Similar to sweet cherry. Sour cherry inflorescence buds usually produce 2-4 flowers, with long pedicels, as in sweet cherry. However, 35-45% of the flowers are borne laterally on 1-yr wood, not exclusively on spurs as in sweets. Spurs are shorter-lived on sour than sweet, gradually declining in productivity over 3-5 years. 
&lt;br/&gt;
&lt;br/&gt;Sour cherries are the latest blooming of the stone fruits, therefore would be less frost prone than sweets. However, frost is still a major limitation to sour cherry production in the eastern US. 
&lt;br/&gt;
&lt;br/&gt;Pollination: Sour cherries are self-fertile, and require no pollinizers.  
&lt;br/&gt;
&lt;br/&gt;Fruit: Fruits are the same as for sweet cherry, but sour cherries generally have lower sugars and higher organic acid contents, and are generally red in color. 
&lt;br/&gt;
&lt;br/&gt;Fruiting begins earlier for sour cherry trees, after 3-4 yr. Productive life is shorter, however, only 20-25 yr.
